
I love overnight oats! They are so easy and there are endless possibilities. I usually start out with a simple base like milk, rolled oats, and chia seeds and make a couple at a time. Sometimes, I add in all my mix ins when I am making the base, and sometimes I add them in the morning. If you are working at intuitive eating, then keeping the base simple and adding in the toppings in the morning can help facilitate listening to your body and choosing what will be satisfying. I believe most toppings are better when added in fresh, but there are some that I don’t mind adding in when I am making them. For this recipe, I think it is best when the toppings are added in fresh. I chose to use pecans instead of the typical almonds you see. Pecans are my favorite, but of course sliced almonds are also a great choice. I also don’t usually measure out my toppings, I just sprinkle some on, but I gave some estimations! If it isn’t sweet enough for you you might consider adding some more honey. I hope you enjoy!

These almond joy overnight oats are something that will get you excited for breakfast!
Ingredients
- 1/2 c. rolled oats
- 3/4 c. almond milk
- 1 tsp. chia seeds
- 1/2 banana
- 2 tbsp. pecans (or sliced almonds)
- 1 tbsp. shredded coconut
- 1 tbsp. chocolate chips
- drizzle of honey
Instructions
- Mix the oats, almond milk, and chia seeds in a mason jar and leave in the fridge overnight.
- In the morning, add the rest of the toppings and stir it!
- Enjoy!
